In old times: ClarisWorks (on OSX NeoOffice) on Macintosh (System 6,7, OS9, OSX)
Now: Scribus for picture books and others; text only books with LibreOffice; PDF creating is part of Scribus/LibreOffice. Furthermore I use Gimp for pictures/covers. Most time on a Linux machine.
To be fair, I have to say that I also help with these open source projects, e.g. with translations or a donation - not only using for free.

I only had a passing interlude with Unix and never had any need to travel the Linux path. I understand the popularity of Linux to its user base however. After initial life with an Apple 2 I moved to DOS with the Victor 9000 and then Microsoft until the early 2000’s when I moved over to Apple Mac much loved and praised by graphics and publishing folk. My original reluctance to that move was my vast investment in MSDOS products, but a free donation of MS Office eased the burden. However further investment was necessary and I effectively became an Adobe shareholder with InDesign, Photoshop and Acrobat.
