Maggie: Are you saying that they can easily reduce my book from 8.75x11.25 to 8.5x11 during printing of the PDF if they need to without upsetting the content? So I'm just "erring on the side of caution?" I'm fine with doing that, but I'm still concerned. My experience this year was horrible, but i was using the old template with a page size of 8.25 x 10.75.

My experience this year was horrible, but i was using the old template with a page size of 8.25 x 10.75. Yes, they reduced the size. It did affect the cover. But, they have precise templates now. This will not happen. Just go ahead with it. Show us your work before you order a proof. We will not fail you. 😉

I can't download a cover template w/o creating a project unless there's a path i'm missing. Where can I get a template?
As for the book, my book is typically 350+ pages and if i have to reformat it with the embedded pictures, etc., it's a disaster. That's almost what i had to do this year.

The Template is created on the fly per-project, the spine dimensions calculated based on the number of pages in your project and the type of book you have chosen. That's why you have to create a project first, so it knows what it has to work with.
If you don't want Lulu to do all the work for you then you are free to prep everything beforehand yourself based on the figures and dimensions printed in Lulu's Book Creation Guide which includes a specific section on how to calculate your spine width based on the number of pages in your project.
Most people opt for the Lulu generated template but there's really nothing stopping you building your own in whatever WP\DTP\Graphics software you have and using that instead.

You don't have to reformat just reprint your PDF I a different size.
