Finally found out why my book was taken down. Apparently there is an error in the copyright section of the wizard saying that my subtitle in the interior file doesn't match what I entered into the page. Support sent me a picture of the wording being squeezed together and said all it needed was spacing. I fixed that and reuploaded the interior. I'm getting the same error and it won't let me publish it. I'd even copied and pasted from the site to the interior and uploaded. Same problem. Gilda suggested using Calibre and adding the subtitle in the meta data but there is no such option in my Calibre. I've downloaded the the source files and they look fine. But after getting an error I tried to download the interior files again and it's using the old files that needed correcting. I don't think it's replacing the interior with the new file. Anyone have any ideas? It's the only thing holding me back from getting this back online.

I don't know if this will help you or not, but I've found many times while trying to upload things, that if I've made changes, the upload doesn't take if the name remains the same. So, I change the names of my uploads to be certain they really do upload correctly. It's as simple as rephrasing the name of the file from, say, Imuploadingthisfile.pdf to ThisisthefileImuploading.pdf.

By the way how did you create your EPUB in the first place? Ninja have you used the EPUB validator? That should always be the first step.
Anyway to answer your question. You're probably looking in the wrong place, do not select the Metadata button. But use. the Edit Book button. Then in the left column scroll all the way down to content.opf and then edit the metadata section. Then Save and Quit.

Lulu just responded again. Turns out it is not my document or my fault. It's a bug in the site that was reported last week. So my book got taken down for two months because of this. Not happy but it did give me a chance to do more proof reading and make some corrections. I took out all of the diagrams and photos though.
