Hi, I know fonts that come with Word can all be embedded in a PDF. In the past I have used fonts like Leander and Berylium without a problem. Formatting my document this time is very tricky - it may take about 80 hours, so I can't risk the font not working in the end. If anyone can help with a list of fonts that will work it will be much appreciated.
Thanks.

The only obstacle I came across was copyright. KDP blocks copyrighted fonts. No problem at Lulu - yet. A little Google research should tell you which fonts require special permissions. Regarding formatting and fonts, you can automatically change the font via Styles and adjust its size as well so formatting is not much affected. I hope I make sense. 6:35 in the morning here.

As Mag2024 has already said: Technically, actually, all of them. Legally, depending on the case. If you use fonts with a open licence, it's certainly easier. Such fonts can be found here:
I hope, it helps.

I always have concerns on such questions.
What is your rationale for using your particular choices of font?

Adobe's own PDF creation software like Distiller pays attention to the embedding flags present in font files and will refuse to use that font if they are set to No Embedding Allowed. There are several different levels of usage permissions with varying restrictions, these are explained in Adobe's Font Embedding Guidelines for Adobe Third-party Developers document. Non Adobe software may or may not pay attention to these embedding flags when a PDF is created but there is no guarantee that when you upload such a PDF to Lulu it will pass their PDF validation process if it finds a font file that shouldn't have been embedded. On Windows you can see the rather clunkily named 'Font Embeddability' permissions for your installed fonts via Control Panel\Fonts and selecting the Details view.
